クッキングサロン小森 オリジナル洋風レシピ（No.045）を紹介します。
今回は、鰯のオムレツ、キャベツと卵のサラダ、ガレットブルトンヌの作り方を紹介します。
ここで紹介しているレシピは分量が４人前になっています。作りたい量に応じて、加減してください。

1.鰯のオムレツ
鰯の風味がぎっしりと詰まった、シンプルでありながら豊かな味わいが魅力です。ふわふわの卵と香り高い鰯が絶妙に組み合わさり、海の恵みを存分に楽しめる逸品です。
材料（４人前）
- 鰯：6尾
- バター：20g
- 卵：3個
- ⽣クリーム：50cc
- 塩
手順
- 鰯はバターで焼いて骨を取り身をほぐして、バター・生クリーム・パセリの微塵切りを合わせる。軽く塩・コショウをして良く練る。
- 卵でオムレツを作り 中央に切り込みを入れ 鰯を詰める。
2.キャベツと卵のサラダ
新鮮なキャベツ、ふんわりとゆでた卵、甘みのあるコーンが絶妙な組み合わせを楽しませてくれます。
材料（４人前）
- キャベツ：6枚
- 卵：2個
- コーン：1缶
- パセリ
A：ドレッシング
- マヨネーズ：大さじ4
- ヨーグルト：大さじ4
- マスタード：小さじ１
- 塩
- コショウ
手順
- キャベツは一口大にちぎり塩を降り、しんなりしたら水洗い水気を絞る。
- 卵は固ゆで粗くつぶし コーン パセリを合わせる
- 【A：ドレッシング】の材料、マヨネーズ大4 ヨーグルト大4 マスタード小
1 塩 コショウを合わせ 【手順１】と【手順2】を和える
3.ガレットブルトンヌ
フランスのブルターニュ地方発祥の伝統的な焼き菓子で、シンプルでありながら風味豊かな美味しさが特徴です。
材料（４人前）
- ⼩麦粉：175g
- アーモンドパウダー：85g
- バター：125g
- 卵：90g
- 胡桃：50g
- アンゼリカ：1本
- ラム酒：⼤さじ1
- グラニュー糖：125g
手順
- 小麦粉とアーモンドパウダーを合わせて、バターを細かくした物と一緒に冷凍庫に入れる。
バターが固まったら、クイジンナート(フードプロセッサー)にかけて細かくしておく。 - アンゼリカは細かく切りラム酒につける 胡桃は砕いておく。
- 卵とグラニユー糖を泡立てて【手順1】を入れて合わせ、【手順2】を混ぜて型に入れる。表面に卵黄を塗りフォークで筋をつけて、180度20分→160度20分焼く。
