クッキングサロン小森 オリジナル洋風レシピ（No.050）を紹介します。
今回は、 コキィーユジャンギノー、海老エスカルゴ風、ぶどうのゼリーの作り方を紹介します。
ここで紹介しているレシピは分量が４人前になっています。作りたい量に応じて、加減してください。

1.コキィーユジャンギノー
「コキィーユ」とは貝を表し、「ジャンギノー」はM.O.Fを獲得したフランス料理シェフの名前です。ジャンギノーさんが考案した料理です。ジャンギノーさん本人に教えていただいた、レシピになります。
材料（４人前）
- 帆⽴⾙：12個
- ⽟葱：50g
- トマト：250g
- ⽩ワイン：100cc
- バター：100g
- エシャロット：1個
- ニンニク：１⽚
- ⽣クリーム：100cc
- プチトマト
- ブロッコリー
- パセリ
手順
- バターで玉葱の微塵切りを炒め、ニンニクの微塵切りを加え トマトコンカッセ（粗いみじん切り）・塩・コショウを加え水分をとばしトマトソースを作る。
- バターでエシャロットの微塵切りを炒め帆立貝を入れ、白ワインを注ぎ軽く塩・コショウ。
貝を取り出しスープはこす。生クリーム・バターを加えてソースを作る。 - 皿にトマトソースを敷いて帆立貝を乗せ【手順】2のソースをかけ、プチトマト、ブロッコリー パセリを飾る。
2.海老エスカルゴ風
エスカルゴ風の風味深いバターソースとガーリックの香りが、エビの旨みと絶妙に結びつき、シャンパンやワインにとてもあいます。
材料（４人前）
- 海老：8本
- バター：100g
- にんにくすりおろし：1片
- エシャロットアッシェ：大さじ1
- パセリアッシェ：大さじ１
- ワイン：小さじ1
- 塩：小さじ1
- コショウ
手順
- バターを柔らかくしてにんにく、エシャレットとパセリのアッシェ（細かいみじん切り）、ワイン、塩・コショウを混ぜる。
- 器に【手順1】を少し入れ海老の1cm位に切った物を入れ、上にまた【手順1】を乗せて、パン粉・バターを乗せ180度で10分焼く。
3.ぶどうのゼリー
ぶどうにゼリーをかけたデザートです。ぶどうそのもの美味しさと、ゼリーの口当たりが絶妙にマッチしたデザートです。
材料（４人前）
- ぶどう：2房
- 水：200cc
- グラニュー糖：80g
- レモン：1/2個
- 粉ゼラチン：大さじ1.5
- 水：大さじ4.5
- ワイン：大さじ4
手順
- 水とグラニユー糖を加熱してシロップを作り、戻したゼラチンを加え溶かし、ワインを入れる。
- ぶどうはたねを出して水につける。
- 器にぶどうを入れて【手順１】を流し入れ固める。

M.O.F.とは
“M.O.F” は “Meilleur Ouvrier de France” の略で、フランス語で「フランスの最優秀職人」を意味します。1924年に設立されました。これはフランスで行われる職業技能競技会の一部で、各分野の最高技術を持つ職人に贈られる称号です。M.O.Fの称号はフランスで非常に尊敬され、入手が難しいことで知られています。各分野において、最も優れた技術を持つ職人に贈られ、その技術の継承や高めるための試験が行われます。
M.O.Fは様々な職種に贈られ、料理や製菓、パン作り、彫刻、美容、ファッション、機械工学、陶芸など幅広い分野において競技会が行われています。受賞者はその分野における最高水準の職人として認識され、フランスや他の国で高い評価を受けることがあります。
エスカルゴの歴史
エスカルゴは、食用としての利用が古代ローマ時代までさかのぼるとされています。この料理の起源は、フランスが最も有名で、エスカルゴはフランス料理の一部として広く知られています。
古代ローマ人は、ワインと共にエスカルゴを楽しむことを好み、その後、フランスでエスカルゴが広まりました。中世のフランスでは、エスカルゴは庶民の食事として食べられ、特にブルゴーニュ地方で盛んに食べられました。
近代になると、エスカルゴはフランス料理の一部として高級なデリカシー（ごちそう）として認識され、特にバターやガーリックソースで調理されたエスカルゴが高級レストランのメニューに登場しました。フランス以外の地域でも、エスカルゴは美味しいデリカシーとして広まりました。
今日では、エスカルゴは世界中の一部の高級レストランで提供されており、その特異な風味やテクスチャー（食感）を楽しむために多くの食通に愛されています。
